I found this recipe online but adapted it because we are not gluten/dairy intolerant. I wanted to share it because it is healthy and so easy. Elias LOVES it!
Banana Cinnamon Protein Quick Bake
- 1/2 banana
- 5 tablespoons whole wheat flour
- 1 tablespoon vital wheat gluten
- 3 tablespoons protein powder
- 1 teaspoon cinnamon
- 1 tablespoon ground flax meal
- 4-8 tablespoon milk (any kind will work!)
- Mash the banana until egg-like.
- Add in all other dry ingredients and stir together.
- Mix in the milk, starting with 4T, and adding more until just a soft but thick batter is formed.
- Grease a small microwave safe dish with butter/coconut oil/cooking spray.
- Spoon in the dough [which should be like a very thick muffin batter] and spread evenly.
- Microwave on high for 2-3min, until the center is set. If cooked long enough, the texture will not be at all gummy.
- Release from the dish with a fork.
tips/subs: To make it gluten free, you can use oat flour or buckwheat. 3T pumpkin puree or 2.5T unsweetened applesauce can be subbed for banana. If adding chopped nuts or chia seeds, add 1T more milk to prevent drying out.
If you do not have vital wheat gluten, consider using part whole wheat/part all-purpose flour.

And THAT lasted about 2 seconds. So we tried this:
Yep…That’s rice, on a cookie sheet. We “drew” in the rice and put handfuls into a bowl. This lasted about 5 minutes before it became more fun to throw on the floor.
You probably can’t see all the rice on the floor but it was a mess. Which is when we went and knocked on vacuum’s door (he likes the vacuum) and asked him to help us clean up.
Then we said bye-bye to vacuum:
And started moving the furniture:
Someday, when he is a teenager and I need help moving that annoyingly large desk, I’ll show him this and remind him that he once LOVED moving furniture
Yep…and now:
Because I’m out of ideas and bending over my belly for the last hour
has left my stomach in need of this:
I’m still picking rice off of my socks!

Welp, I'm 39 weeks pregnant and I'll be honest...my netflix has been on WAY TOO MUCH these days. I am embarrassed. I always *knew* I'd be the mom who never let my child watch TV. Enter in an 18 month old and full term pregnancy. Lately we've been watching these totally awesome shows:
The Backyardigans
Blue's Clues
and a little Sesame Street when he is feeling especially educational and willing to sit still.
Oh dear. I'd love to be the mom who has all the energy in the world, taking Elias to the park instead of wasting an hour a day on TV but I just don't have it anymore. AND I HATE IT! I need some toddler activity ideas for 18 month olds. Every toddler list I've seen is meant for children who are at least 2 and can handle a little more structure...which is something Elias just doesn't do...at all. He loves to play in water outside but its a little chilly for that. He likes walks, which we take when I am feeling especially fit and flexible! HA! And finger painting hasn't been his idea of fun...yet! But otherwise, I don't have many ideas.
Any suggestions momma's?!
